I use sauteed onions, mustard, mayo, and pickles.
I make tuna melts. Toast the bread first. Apply tuna mix. Cover with pepper jack cheese. Broil in the oven until bubbling.
I could see some fresh lemon making this better but who the hell has fresh lemons around.

its what u add in your tuna while making it thatll change it up.
always add equal amount of mustard as mayo. add some pepper.
also can use taco sauce and or add a little peppercini juice.

Tuna (Real not Lite) ,boiled eggs(chopped), DILL relish, mayo(2TBL), mustard(1 Teas), ranch dressing(2 Tbl), S&P(to taste I like lots), celery salt ( Pinch), garlic powder(Pinch).
Stir well and let set for an hour or so in the frig.
