Really depends what league and what sport.
The Koreans in League of Legends have really good safeguards in place and the penalties for throwing or fixing are draconian. The players are mini-celebrities over there and the money is excellent so you're not going to find obvious/blatant/purposeful throws there.
The Chinese leagues are a different matter and have had their fair share of corruption, head-shaking matches, especially in DOTA2 and the smaller minor competitions.
99% of the matches are legitimate. Many who claim fix are just witnessing terrible play, horrible teamwork, or utter collapse, much like a hail mary bomb in football that connects or a half-court shot in basketball that goes in. Sometimes a team will try experimental line-ups, hero selection, or risky play to see how it performs in a real-life game-setting. Sort of like the Houston Rockets deciding not to play with a dedicated center or an NFL team deciding to throw the ball 90% of the time and abandon the run and go for it on 4th down every time in the opponent's half. Not a fix, but experimental play.
If you are worried about betting on a fixed esport, stick to the Korean games, major Chinese DOTA2 competitions, Rainbow 6, and the top flight leagues of CSGO. Some of the lower flight competitions of CSGO are a little shady as are any Chinese DOTA2 below the top league.
Stay far away from the FIFA competitions, especially from Russia.
