Or will it ever be possible to change the ��set�� lines on the match-up screen or in individual match-ups? If not, which lines (book) does Covers use for these lines?

It is not possible to change the odds you see on those pages though you can click on 'Line History' to see the odds from the various books. The lines shown are the 'Covers Line' which takes 4-5 books into consideration and provides the average of them.
